Chicken Curry

What you’re gonna need to make this recipe is:

  • 4 carrots
  • 3 chicken breasts
  • 1 onion
  • Olive oil
  • 2 tomatoes
  • Tomato paste 200ml
  • Coconut milk 200ml
  • Heavy Cream 200ml
  • Cilantro
  • Basmati rice
  • Curry powder
  • Garlic powder
  • Salt
  • Pepper
  • Cooking oil

How to prepare this dish:

1. You’re gonna start by preparing your chicken and vegetables, get your chicken breasts and cut them into cube shapes. Grab your carrots and skin them and slice them as well.

2. Get your cut up chicken breasts and place them into a bowl. Add salt, pepper, curry powder, bit of lemon juice and some garlic powder and mix it up, leaving it to marinate.

3. Get a pan and place it on the stove on high heat, cover the bottom part of it with oil. Add two cups of basmati and mix it around until it turns white, only then do you add 4 cups of water to the pan and some salt, leave it until it boils, when the water boils reduce the heat and leave it until you see that the rice is all separated and fluffy.

4. Grabbing another pan you put a bit of olive oil to cover the bottom of the pan and add your onions and sliced tomatoes, letting it cook until the onions turn clear. Add your tomato paste and add the carrots, add some salt, pepper and garlic powder mixing everything around. Then I add my chicken cubes into the pan letting it cook for 7-8minutes on medium heat, once the chicken is cooked add your coconut milk and heavy cream mixing everything around, I always like to add a bit more curry powder but that depends on each persons liking.

Homemade bread to eat with the curry, you’re gonna need:

  • 2 cups Flour
  • A bit of olive oil
  • A pinch of salt
  • 1 cup of water
  • Cilantro

How to prepare the bread:

1. Add into a bowl all of the ingredients above and mix, leaving it to rest for 15 minutes.

2. Once your dough has rested, get a frying pan and add a bit of oil and pinch of salt .

3. Cut your dough into however many pieces you want and then place on frying pan, it should be quite thin and airy, fry it on both sides and there you have the bread to eat with your curry.
