Costco Chicken Round 2
Okay, I bought another $4.99 Costco Rotisserie Chicken and here is how many meals/recipes I was able to get from one chicken!
First, I removed the legs, thighs and wings. Then I removed the chicken breast meat. The main chicken bone and the wings, I added to a pot with water. I then chopped up some onions, celery and garlic. After sautéing the veggies with salt, pepper and parsley. I added it to the pot and allowed it to simmer to create a chicken broth. I seasoned a bit more with salt, pepper, season salt and parsley. I also added a chicken tomato bouillon cube for more flavor. After it simmered for about 30 minutes. I removed the bones; any remaining meat still on the bones I added back to the broth. Next I added about 1.5-2 cups of milk and 1 ½ cups of wild rice. I had milk that needed to be used before spoiling, so the soup ended up thicker and more like a porridge than I anticipated, but flavor wise it was delicious and the perfect lunch for some of the colder spring days.
Next up: Chicken Nachos! I took about ¾ of the leg and thigh meat and diced that up. I then added some of the chicken breast chopped up to give variety. I seasoned it with garlic powder, onion powder, elote seasoning, chili powder and some chipotle seasoning. I let it refrigerate overnight to absorb some of the flavor. The next day I took it out of the fridge. I then chopped up some tomatoes, peppers and red onions. I preheated the oven to 350. I covered a sheet pan with foil. Laid out my late July tortilla chips and then topped with the tomatoes, onions, peppers and chicken. I then topped with Colby jack, mozzarella and cheddar cheese. I baked in the oven for about 10 minutes. Once it started to get golden I turned on high broil for the last minute to get an extra crispy. While they were in the oven, I chopped some lettuce for toppings. Other toppings included salsa, sour cream and this lime cilantro sauce I got from Costco. It was a great hearty dinner and a fun way to use the rotisserie chicken!
The remaining leg and thigh meat, I used to make a quick pasta dish. I took a Chicken pasta Knorr side and prepped to the directions on the back. Then I sautéed the chicken with onions, mushrooms, garlic, salt and pepper in my homemade butter. Once the pasta was cooked, I added the stir fry and it was a quick and easy dinner with left over for lunch. Because I have to use every part of the chicken LOL, I took the chicken skin and fried it in the same pan to get it nice and crispy. It became the topping of the pasta and provided a great crunch with each bit! It was a great meal, when you in a time crunch or you don’t know what to make!
The last of the chicken breast were used in a pasta bake. Similar to the meatball one and the alfredo one I have done before, this is a simple, easy dump recipe but so very delicious!
First I preheated the oven to 425 and greased a glass baking dish. Then I dumped 1 box of rotini pasta, one jar of alfredo sauce, the chopped chicken, chopped tomatoes, a sprinkle of grated parmesan and 2 cups of a tomato chicken broth. I stirred until well combined and then remembered to season with salt, pepper, Italian seasoning and garlic and then stirred again. I covered the dish with foil and then baked for 40 minutes. I took the baking dish out, stirred the pasta added 2 heaping handfuls of fresh spinach and topped with mozzarella cheese and parmesan. Then finished back in the oven, uncovered, for 15 minutes. It became quite a delicious meal and was addicting. Second helpings were necessary.
