Ingredients 400g Sweetened Condensed Milk 450g Light Brown Soft Sugar 130g Milk 120g Unsalted Butter Vanilla Extract Salt Equipment Pot Scales Stirring stick Stovetop Thermometer Baking tin Greaseproof/Parchment paper Method Line Tin with greaseproof paper Cube Butter Add Butter to pot Add Sweetened Condensed Milk to pot Add Light Brown Soft Sugar to pot Add Milk to pot Heat on low until sugar is dissolved and butter is melted, stir often Slowly raise to a rolling boil Bring up to soft ball temp (112 to 116 °C [234 to 241 °F], alternative test by dropping a small spoonful into cold water), if not using a non-stick pot stir carefully to stop it catching and burning on the edges Remove from heat Beat the mixture in the pot Add pinch of Salt Add large splash of Vanilla Extract Beat Let cool in pot for 10 minutes Beat Let cool for 5 mins Beat Pour into lined tin Cool in refrigerator for 3 hours Turn out Cut into pieces
